Whipped praline ganache
Make a caramel with the sugar, water, and glucose. Deglaze with the warm cream and add the fleur de sel. Pour over the melted gianduja and stir in the praline paste. Cover and let rest in the refrigerator overnight.
Caramelized hazelnuts
Preheat the oven to 150 °C, spread the hazelnuts on a baking sheet, and roast for about 15 minutes. Boil the sugar and water to 119 °C and add the warm nuts. Remove from heat and stir until the nuts are completely sanded. Return to the heat and continue stirring until they are nicely coated with caramel. Stir in the soft butter and pour the nuts onto a silicone mat or marble work surface to cool.
Crunchy milk chocolate glaze
Melt the chocolate and heat to approximately 45 °C. Stir in the oil and finally add the chopped hazelnuts. Use the glaze at a temperature between 30 and 35 °C.
Assembly
Whip the ganache using a stand mixer. Randomly distribute some caramelized hazelnuts over the Sablé Breton eclair base and pipe dollops of ganache of varying sizes on top. Sprinkle with some chopped hazelnuts and place in the freezer. Heat the glaze in a deep bowl to 30–35 °C and dip the eclair upside down into the chocolate so that the entire top is covered. Let thaw before serving or selling.
