Foie gras terrine – 125 g
Gelatin leaves – 3 pcs.
Milk – 75 ml
Cream – 300 ml
Salt and pepper
Mustard seeds – 125 g
Rice vinegar – 175 ml
Water – 175 ml
Sugar – 63 g
Salt – 1 teaspoon
Red onion
White wine vinegar – 150 ml
Water – 150 ml
Sugar – 40 g
Pata negra – a few slices
Cress and edible flowers


Foie gras flan
Soak the gelatin leaves. Heat the cream and milk to 60°C and dissolve the gelatin in it. Add the foie gras terrine and blend until smooth. Season with salt and pepper. Pour into a mold and let set.
Pickled mustard seeds
Mix everything together and simmer slowly over low heat until all the liquid has reduced.
Pickled red onion
Cut the red onion into the desired shape. Mix the vinegar with the water and sugar, bring to a boil, and pour over the onion. Let it marinate in the refrigerator overnight.
Assembly
Use a cutter to cut rounds out of the foie gras flan and place them on the Sablé Breton base. Place a slice of pata negra on top, followed by a few pieces of red onion and a little mustard seed. Finish with a flower and cress.
