Lemon cream
Heat the sugar, lemon juice, and zest. Add the eggs and cook to 84 °C. Pass through a sieve and leave to cool. Mix in the softened butter and citric acid at 40 °C. Let it rest in the refrigerator overnight before using the cream.
Italian meringue
Whisk the egg whites using a stand mixer. Boil the sugar and water to 119 °C, remove from the heat, and pour in a steady stream into the whisked egg whites. Continue whisking until cold using the stand mixer.
Assembly
Fill the Sablé Breton base with the lemon cream. Place the pastries in the refrigerator briefly until the filling has set. Mask them with the cold-whisked Italian meringue and torch them just before serving.
