Crème patissière
Breng de melk aan de kook met de room, de vanille en de helft van de suiker. Meng de andere helft van de suiker met het maiszetmeel en meng dit vervolgens met de eidooiers. Voeg een deel van de warme melk bij het dooiermengsel en roer goed. Voeg alles samen zodra de massa op het vuur kookt en laat goed doorkoken. Laat afkoelen. Klop de mascarpone los met de keukenrobot en klop na het afkoelen ook de crème los.
Opbouw
Meng de losgeklopte crème patissière met de losgeklopte mascarpone. Vul de Sablé Breton bodems met de crème en beleg met vers rood fruit.
