Soft vanilla caramel
Boil the cream with the vanilla bean and the fleur de sel. Let it boil thoroughly and then cool down. Gradually whisk the cooled vanilla cream into the caramel filling until it reaches a pipeable consistency.
Caramel cream
Mix the gelatin powder with the cold water and let it bloom. Boil the cream, remove from heat, and add the gelatin. Pour this over the salt, caramel filling, and white chocolate. Mix, then add the vegetable whipping cream. Blend until smooth and let rest in the refrigerator at 4–6 °C for 12 hours. Then, whip like whipped cream.
Crunchy almond
Mix all ingredients together. Bake until crispy and golden brown in an oven at 170 °C with the vent open. Stir regularly for even coloring.
Apple-cinnamon filling
Season the apple filling with the cinnamon.
Assembly
Using a 16 mm piping tip, pipe a ring of caramel cream slightly smaller than the base. Sprinkle with the crunchy almond and place in the freezer. Pipe a spiral of soft vanilla caramel onto the Sablé Breton base and apply a thin layer of caramel cream on top. Lightly dust the frozen ring with decorative sugar and place it on top. Fill the ring with the apple-cinnamon filling.
