Raspberry-cardamom jelly
Heat the raspberry purée and add the cardamom. Blend and let infuse for 15 minutes. Strain the infusion and add the glaze and raspberry crumble. Bring to a boil while stirring and let simmer for 5 minutes. Pour onto a tray, cover with plastic wrap, and let cool. Once cooled, break it up with a spatula and transfer to a piping bag.
Pistachio cream
Mix the water and cream powder for 3 minutes at high speed using a whisk. Fold in the pistachio paste. Whip the plant-based whipping cream and fresh cream together to ¾ stiffness and fold into the cream.
Assembly
Pipe a spiral of raspberry-cardamom jelly onto the Sablé Breton base. Pipe a generous spiral of pistachio cream on top and finish with fresh raspberries. Place a few raspberries upside down and fill them with the jelly. Decorate with thin chocolate shards and pistachios.
