Foie gras flan
Soak the gelatin leaves. Heat the cream and milk to 60°C and dissolve the gelatin in the mixture. Add the foie gras terrine and blend until smooth. Season with salt and pepper. Pour into a mold and leave to set.
Pickled mustard seeds
Combine all ingredients and simmer slowly over low heat until all the liquid has reduced.
Pickled red onion
Cut the red onion into the desired shape. Mix the vinegar with the water and sugar, bring to a boil, and pour over the onion. Leave to marinate in the refrigerator overnight.
Assembly
Use a cutter to cut rounds out of the foie gras flan and place them on the Sablé Breton base. Top with a slice of pata negra, followed by a few pieces of red onion and a little mustard seed. Garnish with a flower and cress.
