An airy smoked eel mousse with a hint of cayenne pepper, finished with a slice of chioggia beet, red beet cream, and sea asparagus. Salty, tangy, and creamy on a crispy Sablé Breton base, ready to serve individually.

Smoked eel mousse
Soak the gelatin leaf. Warm a small amount of cream and dissolve the gelatin in it. Add the eel and blend until smooth. Season with salt and cayenne pepper. Whip the remaining cream until soft peaks form and gently fold it into the mixture. Divide into molds and leave to set.
Chioggia beet
Slice the Chioggia beet thinly and cut out rounds.
Red beet cream
Blend the cooked red beet until smooth with pepper, salt, and Chardonnay vinegar. If necessary, thicken slightly with xanthan gum. The cream should have a nice, sharp acidity.
Assembly
Remove the mousse from the molds and place on the Sablé Breton base. Top with a round of Chioggia beet seasoned with a little sushi vinegar. Place a piece of smoked eel on top and pipe the red beet cream over it. Garnish with sea samphire, cress, and a flower.
