Krokante vulling
Smelt de witte chocolade tot 40 °C. Voeg de hazelnootpraliné en de feuillantine toe en meng.
Chocoladecrémeux
Meng de melk, de room, de suiker en het eigeel en verwarm al roerend tot 85 °C. Giet het warme mengsel door een puntzeef op de pure chocolade. Mix met een staafmixer tot een zalvige, homogene textuur.
Opgeklopte chocoladeroom
Verwarm de plantaardige slagroom en de verse room tot 60 °C. Giet op de pure chocolade en de invertsuiker en mix tot een homogene massa. Laat 12 uur rusten in de koeling op 4 à 6 °C. Klop daarna op zoals slagroom, maar niet te stijf: zo blijft de room glad om te spuiten.
Opbouw
Vul de Sablé Breton bodem met een dun laagje krokante vulling. Werk verder af met een laag chocoladecrémeux en laat uitkristalliseren in de koeling op 4 °C. Spuit er daarna met een soleil spuitmond en een draaitafel een spiraal opgeklopte chocoladeroom op. Decoreer naar wens.
